Veganised penne mince bolognese
A veganised version of traditional penne bolognese, tweaked to include vegan mince.

Instructions
  1. Wash the bell pepper well, and transfer to a chopping board. Peel and chop red onion, garlic (finely) and bell pepper into cubes.
  2. Heat oil on a saucepan, then add garlic, cooking on a medium heat for 1 minute until fragrant. Add in red onion and bell pepper, cooking for 3-5 minutes or until softened.
  3. Stir in the cumin, smoked paprika, oregano and basil, with tomato paste and a splash of water, stir into a paste adding salt/pepper and a splash of water, combine well and add in the vegan mince, once sizzling, leave to cook for 5-8 minutes, gently stirring, add a tsp of sugar to complement the flavours in the mix. Once cooked through, turn off the heat and set aside.
  4. Meanwhile, prep your penne, boiling 1l water in a saucepan with a sprinkle of salt and a drizzle of olive oil, to prevent the pasta sticking together. Cook the penne according to instructions, then drain well.
  5. Combine the bolognese sauce with the cooked penne pasta, stir well and serve.
  6. Feel free to sprinkle on some vegan cheeze and serve by itself or with salad or bruschetta, enjoy!
